Our motto: go big or go big 😌 To make our giant Eclair, we whipped up chocolate and vanilla cake, then piped layers of Italian meringue buttercream “shells” around the middle and gave it that ‘dipped’ look with some dark modelling chocolate. An edible gift box using a vacuum-forming machine! I created a custom circular gift box shape, and then filled the mold with tempered white chocolate. I used modelling chocolate to create a bow and handle, then placed a small opera cake in the centre. I put some dry ice in the bottom (without touching the cake!) and poured hot coffee over the top to create a dramatic flavoured infused finish. | Matt Adlard

Taco bout a fiesta! 🌮 These mini tacos are made of chocolate cake wrapped in a sugar and spice mix tortilla, then filled with "meat" made of rice krispies mixed with chocolate and black jelly beans and topped with chopped up licorice tomatoes, shredded coconut lettuce, and modelling chocolate cheese.
